Made with IXL Strawberry Jam (or sub with our Raspberry/Forest Fruits or Plum Jam) these crunchy, chewy treats are bursting with flavour and loaded with all the good stuff for a snack on the run, mid-morning treat or afternoon pick-me-up. #ToddlerApprovedSnack
Line a 20 x 20 cm baking tray, allowing an overhang for easy handling.
Step - 3
Combine the IXL Jam, diced strawberries and cornflour in a bowl, mix and set aside.
Step - 4
Next, melt the butter and allow it to cool before adding the vanilla extract and set aside.
Step - 5
In a medium bowl, add all the dry crumble ingredients, then pour in the melted butter mixture and stir with a spatula to bring the crumble together.
Step - 6
Grab the lined tray and add 3/4 of the crumble mixture, pressing down & levelling firmly across the base of the tray. Bake for 12 minutes and remove from the oven.
Step - 7
Smooth the prepared berry and jam filling over the crumble base and then scatter the remaining crumble over the top, and bake for a further 20 minutes.
Step - 8
When done, allow to cool completely in the pan. Once cooled, place in the fridge to set for at least 4 hours before cutting.
Step - 9
Store bars in an airtight container in the fridge for up to 5 days or wrap in cling film, place in a sealed bag and freeze.
BERRY & JAM FILLING
Ingredients :
3/4 cup IXL Strawberry Jam
250g fresh strawberries - diced
1 teaspoon cornflour
THE CRUMBLE
Ingredients :
1 cup wholemeal plain flour (gluten-free plain flour also works)
1 cup rolled oats
1/2 cup moist coconut flakes or desiccated coconut
